    We'll begin with Empanadas; a pastry filled with beef, tomatoes, potatoes and herbs. Flautas are next with chicken in a jalapeno and garlic paste fried crisp in a corn tortilla. We'll then prepare authentic Mexican rice made with onions, garlic, tomatoes and fresh cilantro along with Mexican style corn prepared with lime aioli, cayenne pepper and Cotija cheese. Fajitas follow with tender strips of marinated beef and chicken with fresh sautéed bell peppers and onions wrapped in a warm tortilla shell. We'll finish the fiesta with a Yucatecan-style delight; a fresh coconut blended with rich custard in a wonderful nutty crust, baked to a caramelly brown, and served with creme fraiche.   • Chicken Marsala VS Chicken Limone

    Begins with bruschetta topped with fresh mozzarella cheese, skinned roma tomatoes and sweet roasted bell pepper sprinkled with fresh basil and drizzled with olive oil. You’ll prepare “Chicken Marsala” with fresh sauteed mushrooms in a sweet Marsala butter sauce. We’ll see how that measures up against “Chicken Limone” topped with a chardonnay, lemon, butter sauce with capers. Both entrees are paired with "Spaghetti Aglio Olio", tender garden vegetables tossed with olive oil, garlic, and Romano cheese. We'll finish with "Diplomatico", a divine combination of rum and espresso soaked pound cake, rich chocolate mousse and fresh whipped cream.   • Cookie Bake & Take: Four Famous Ethnic Cookies

    Impress family and friends with these beautiful cookies for the holidays! Create the rolled Norwegian Krumkakes made with cream, butter, and cinnamon or sometimes flavored with vanilla. For generations, Minnesotans have purchased their irons to bake krumkakes from local manufacturer Nordic Ware in St. Louis Park. Italian Pizzelles are also baked on the top of the stove using an iron but are a flat, anise-flavored cookie or they also may be flavored with vanilla. The chewy, almond Swedish Sandbakkelse are delicate golden brown in color and are baked in tiny tins to resemble tarts. Finally, we will master deep fried Rosettes - those exceedingly fragile, paper thin Scandinavian delicacies dusted with confectioners' sugar. Expect great recipes plus the many tips and techniques that will make your baking a success! **An ingredients fee of $14 is payable to the instructor at class. Please also bring containers to bring home your cookies. Ages 14+ only, please.

    Join us to create up to 15 sensational dishes baked in your oven using a single piece of cookware. Using fresh ingredients (no canned soups), make delicious meals for an easy prep family meal, an impressive fare for friends, or a crowd-pleasing recipe for pot luck. Many of these hot dishes can be made ahead, chilled and then baked. **Cost of food ingredients ($16) will be collected at class.

    Join us in preparing a sumptuous Greek feast, including the national soup (Soupa Avgolmon), a lemon flavored chicken soup. The menu is rounded out with a flaming cheese appetizer (Saganaki) and eggplant appetizer, zucchini with ground lamb (Moussaka), spinach rolls in fillo (Spanokopeta), and walnut cake with orange syrup (Karidopita). **Cost of food ingredients ($17) will be collected at class.

    This class is not about instant ramen. In fact, we will be making Japanese miso ramen from scratch. We will start with making ramen noodles from scratch. Then, we’ll braise cha shu chicken and make miso broth. We will serve our ramen with marinated soft-boiled eggs and different toppings.

From “a Month of Meatless Mondays” to “Taco Tuesdays Ten Ways” to “Souper Sundays”, there’s something for everyone. Megan and Kirsten believe that meal planning should be fun! They’ll share their favorite tips and tricks for making meal prep a breeze—from grocery shopping to prepping ingredients in advance—in a handout full of recipes. The live classes will be recorded so you can rewatch at your convenience. Kirsten is a champion of cookware who enjoys teaching Instant Pot/air fryer classes from her kitchen with 3 dogs underfoot. Megan is a master of meal planning who manages her busy boys’ schedules and school with grace and style—and would never have a dog in her kitchen! As this course will be taught virtually, you will need access to video and audio on a computer, tablet or smartphone with internet connection. Class will be held live using the online platform Zoom, which is free to use. The Zoom link will be emailed to you prior to class.

Included are Vietnamese spring rolls (fried) with pork, turkey, and glass noodles stuffed in rice paper and fried crisp and golden. You'll then prepare Pad Thai blending the vibrant flavors of Thailand with rice noodles, breast of chicken, eggs, chilies, garlic, basil, scallions, bean sprouts, and more.     Thai cuisine is full of aromatic ingredients, cooking styles, and dish decorations. In this online interactive class, we’ll make 3 popular and delicious Thai dishes from scratch including Thai vermicelli salad, Thai coconut soup, and pad Thai with chicken.

    Enjoy traditional Italian favorites beginning with classic panzanella, a toasted bread salad with refreshing summer vegetables in a light vinaigrette. You'll prepare the celebrated chicken saltimbocca using thins slice prosciutto ham and fresh sage topped with a lemon caper butter sauce and pan fried artichokes. You learn the art of potato gnocchi, shaped potato dumpling, tossed with a medley of amazing sauces including fresh basil pesto, marinara, and brown butter with sage. We'll finish with cannoli, fired pastry filled with sweetened ricotta and mascarpone cheeses, served on a pool of warm chocolate sauce and garnished with chopped pistachios.
